Where to Find Birria Around the Twin Cities

From its origins in the Jalisco region of Mexico to its evolution in Tijuana, the popularity of birria is spreading around the country like crazy. One may argue that this has become of the hottest food trends in major cities largely as a result of social media. Finally, the birria movement seems to be hitting the Twin Cities — even showing up at some unlikely places — and we are here for it.

For those who may not know exactly what birria is, here’s a quick lesson on the dish in its various forms. First there’s birria de caldo, a meaty soup traditionally served for celebratory occasions in Mexico comprised of an adobo chile-based broth and made with goat, birria de chivo. However, as most cuisines inevitably do, the dish has evolved in a number of ways including quesabirria, a Tijuana-rooted variant where slow cooked beef is loaded into broth-dipped tortillas, folded and fried with cheese on a flat top grill, and served with a side of the broth (consomé) for dipping. Raw diced onion and finely chopped cilantro adorn the shredded meat. It’s the comfort food that you didn’t know you needed until now.
